Join us for a weekend full of celebrating Louisiana's cajun culture where music and food are the heart and soul. Dance the night away to Rouge Krewe on Friday, February 21 and enter in our Boudin Cracklin Cook-Off on Saturday, February 22!
Cooking Starts @ 8am-10am (Late entry accepted up until 10am). Tasting will be from 2pm-3pm. Each team will be responsible for handing out samples to guests who have purchased a wristband for sampling. Sampling wristbands with one peoples choice ticket per band will be sold at the information table for $5 and all proceeds for sampling will go to the St. Jude Foundation.
Cracklin Cook-Off Rules:
1. Each team must consist of at least 2 people or no more than 4 people over 18 years of age. 2. Contestants must cook a minimum of 15 -20lb of crackling fat. 3. Each team must cook cracklin during the required contest time limit. 4. Each team must begin cooking No earlier than 8:00 a.m. and end at 2:00pm. 5. Each team is required to turn in cooked cracklin’ in the bags provided by Camp Margaritaville for pick up no later than 2 p.m. (pick up time starts at 1:45 p.m.)
Traditional Pork Boudin Cook-Off Rules:
1. Each team must consist of at least 2 people or no more than 4 people over 18 years of age. 2. Contestants must cook a minimum of 20lbs of Boudin and provide 3 full links for judging which should be ready for pick up no later than 2:00pm. (pick up time starts at 1:45 p.m.) 3. You may prepare ingredients beforehand, but boudin must be stuffed and cooked on site within the time allowed. 4. You are strongly encouraged to bring and prepare enough boudin to satisfy the demands of the people sampling. (you may cut links in smaller sizes for sampling)
